Website by Denis Dubreuil - © DenMaur Webshops 2011 Orange Pecan Recipe: 1 1/2 cups all purpose flour 3/4 cup sugar 1/2 cup whole wheat flour 1 tbsp baking powder 3/4 cup chopped pecans 1/3 tsp salt 2 eggs 1 cup milk 1/3 cup melted butter 1 tsp vanilla 1/4 tsp almond extract 1 10 oz mandarin oranges drained and chopped or 2 tbsp grated orange peel 3/4 cup chopped fresh orange or mandarin segments METHOD: 1. Combine flours, sugar, baking powder, salt & pecans in a large bowl, stir till blended. 2. Beat eggs with milk, butter, vanilla and almond extract. 3. Pour wet ingredients over dry and just stir to combine. Stir in oranges and peel. 4. Spoon mixture into buttered 9x5 loaf pan. Bake at 350 for 60-65 minutes. Maple Syrup Muffins Recipe: 1/4 cup margarine or butter 2 tsp baking powder 1/2 cup white sugar 3/4 cup rolled oats 1 tsp salt 1/2 cup milk 1 1/4 cups all purpose flour 1/2 cup maple syrup METHOD: Soften margarine, blend in sugar and salt. Add dry ingredients and blend with pastry cutter until crumbly. Mix in oats. Blend milk and maple syrup in measuring cup and pour over dry ingredients stirring only to moisten. Bake at 350 for 20 minutes. Maple Syrup Cookies Recipe: 2 eggs 1 cup brown sugar 1 cup shortening or margarine 6 tbsp maple syrup 2 tsp soda 1 tsp vanilla 3 cups all purpose flour METHOD: Cream shortening, sugar and eggs, beat well, add maple syrup and beat. Measure soda into first 2 cups of flour, add to above and mix well. Keep adding flour until right consistency to roll. Roll dough 1/4” thick, cut with cutter. Place on ungreased cookie sheet and bake at 350 for about 8 minutes, while warm put together with apple jelly. Johnny Cake Recipe: 2 cups sifted flour 3 eggs, beaten 4 1/2 tsp baking powder 1 cup milk 3/4 tsp salt 1/2 cup maple syrup 1 cup cornmeal 3/4 cup melted shortening METHOD: Sift the first 3 ingredients together, add cornmeal and mix thoroughly, combine remaining ingredients and add to dry mixture, stirring only enough to dampen flour mixture, pour into greased pan. Bake at 400 for 30 minutes. Lemon Nut Loaf Recipe: 1 1/2 cups all purpose flour 1 tsp baking powder 1/2 tsp salt 1 tsp grated lemon rind 1/2 cup shortening 3/4 cup granulated sugar 2 eggs 1/2 cup milk 1/2 cup chopped nuts Glaze: 1/4 cup granulated sugar & 2 tbsp lemon juice METHOD: Combine flours, baking powder, salt & lemon rind. Stir well. Cream shortening, sugar and eggs thoroughly. Add dry ingredients alternately with milk to creamed mixture, mixing lightly after each addition. Stir in nuts. Turn into a greased and floured 8 1/2 x 4 1/2 loaf pan. Bake at 350 for 55-65 minutes or until toothpick inserted comes out clean. Leave in pan. Combine sugar and lemon juice, stirring until dissolved. Pierce top of loaf with fork, spoon glaze over hot cake, letting it soak in. Let stand 5 minutes, then remove from pan.
